Creamy Chicken with Veggies over Rice

All my recipes cost under $30 if you shop at Safeway (with a club card) or Ray's Food Place. I include cook's tips and recommendations, but they are just suggestions, alter the recipe to your liking, as most of these recipes are flexible. As far as amounts, accommodate the amount that you buy to the number of people you are serving. For two people, this recipe, at Safeway, costs between $20 and $25, assuming you have none of the ingredients at home. Enjoy! Saucy chicken Ingredients -Chicken breasts (steaks or fillets, steaks work really well here) -Olive oil or olive oil spray -Breadcrumbs -1 tub cream cheese with chive and onion -1 can chicken broth -Rice (I recommend brown rice) -A vegetable of your choice (broccoli works well) Kitchen Items -glass baking pan -two small saucepans -small microwavable bowl -small plate Steps -Heat the oven to 375 degrees -Coat or spray the chicken and the pan with the olive oil On a small plate, pour some of the bread crumbs, and cover the chicken in them (I typically put the chicken on the plate with the bread crumbs and pour more on top, then do that to the bottom, so it gets completely covered.) Optional: to ensure even, complete cooking, cut into the chicken in a few places about half way through the breast -Bake for 30 minutes, or until done. -While that's cooking, use half the chicken broth to cook the brown rice, and cook according to the directions in one of the saucepans. -When there are 10 minutes left on the chicken, start making the sauce. Mix the other half of the chicken broth, and mix with the cream cheese in a saucepan on medium heat for ten minutes, stirring occasionally. -When there is five minutes left on the chicken, fill the small bowl with the vegetable, and fill halfway with water. Cover the bowl with a paper towel, and cook in the microwave for five or six minutes. -Dish everything out and cover with the sauce (it's good on all three things.)
